Hot Chocolate Soufflé
butter
sugar
3/4 cup chocolate chips
2 tablespoons butter
4 egg yokes
1 cup sifted confectioner sugar
5 egg whites, at room temperature
1/2 teaspoon cream of tarter

Grease a 6inch-soufflé dish generously with butter coat the inside with
sugar, shacking out the excess.

Combine 2 tablespoons of cold water and the chocolate chips in the top of
a double boiler. Place over hot water until the chocolate chips are
melted, then beat with a wire whisk until blended. Cut 2 tablespoons of
butter into small pieces and add to the chocolate, 1 piece at a time,
beating until the butter is melted. Cool slightly.

Place the egg yolks in a large mixer bowl and beat with an electric mixer
until lemon colored. Add the confectioner's sugar gradually and beat until
thick. Add ¼ of the chocolate mixtures and beat with a wire whisk until
blended. Add the remaining chocolate mixture and beat until well mixed.

Beat the egg whites and cream of tarter with the electric mixer until
stiff peaks form. Fold ¼ of the egg whites into the chocolate mixture,
blending well. Fold the remaining egg whites until well mixed.

Spoon into the prepared Soufflé dish and smooth the top. Bake in a
preheated 400-degree oven for 35 minutes or until set.

Dust with additional confectioner's sugar, if desired and serve
immediately. Make about 6 servings.

2. I don't think you will be disappointed.
It's very good. I have never tried it with custard.
