I miss my kitchen
Hubby and I are on a trip. We've been driving to Florida since last Friday. One of his uncles passed away. We're in Tallahassee tonight and will arrive in Bradenton tomorrow. We're camping with the RV, so I packed easy-to-fix meals. Last night I just had to make something from scratch and fixed some fried onions and potatoes. It was great to peel, slice and dice.

One nice thing is to have internet via wifi when it's available. But I sure miss my kitchen back home.

1. I miss my dishwasher.
It broke over the weekend. The part is under warranty, but it takes two weeks so ship (how can that be? I get stuff off ebay in days!). So I am doing easy to fix meals, too, on account of I am too lazy to hand wash many dishes.

My pots and pans, the bigger stove and the dishwasher - oh, the dishwasher!

I like my meals. But last night we went to a restaurant right on the beach and had grouper stuffed with crab, rice and veggies steamed to perfection. My meals are good but that meal humbled me.

12. Grouper ..... one very special fish, indeed.
I was on a business trip to St. Lucia some years ago. My client was a high end resort hotel and so, obviously, I stayed at their property. The breakfast buffet each day had grouper in one form or another. It was to die for! I've had it a lot since then and its always good, but that was the best.

3. my MIL lived in an RV 5-6 months every winter for over 20 years
she cooked for them and entertained up to 5 couples cooking in that tiny workspace

I don't know how she did it!

Now they have a "park model" (single wide trailer) in their favorite winter park and she even got a portable dishwasher last year :bounce:

it certainly explains why she almost never uses a cutting board and I have to warn her every visit that my knives are SHARP, even my small paring knives, cuz she cuts EVERYTHING while holding it in her hands

she's (wisely) gotten into the habit of bringing in her own knives from the RV when she helps me prep dinner, she's cut herself more than once using my knives, poor thing


sorry to hear about your loss, but try and enjoy your mini trip and just be grateful you don't spend 6 months a year in the RV :)

funny what we miss when we're away from home huh?

10. She's a trooper!
And yes, we do miss the small things. I finally saw some of the Alito hearings this morning. And the wifi here finally got fixed today. You can get to feeling very cut off with nothing but Michael Savage on 3 radio stations every night. He can give you indigestion worse than a bad meal!

It's an adventure, though. And I'm getting into the swing. I'm more used to just going up into the mountains for a few days. One very nice thing is not having to go out for every meal. Easier to control the fat intake. I think that since I posted this topic, I've turned a corner.

I've got some sharp knives here, too. But there's a cutting board that fits over half the sink. I've still got all my fingertips!

I'm at my dad's house in Florida, and the kitchen, such as it is, was presided over for 30 years by a woman who detested cooking, then by my dad living the bachelor life out of a microwave for the past 4 years.

To say the facilities suck is a gross understatement. There is NO decent equipment. I finaly went to a dollar store to buy some cheap knives because nothing in that kitchen was sharp nough to cut LETTUCE.

I sincerely hope I'm the hell out of here by mid February. I can't hold out much longer without cracking.

that just sucks, I can improvise with bad pots and a bad stove or oven, but there is no getting around bad knives..... try and find one of these, they're only about $10-15 and well worth it!

6. Dollar General came to my rescue

and provided an 8" chef's knife, a boning knife, and a slicing knife for a whopping three dollars.

I expect them to stay sharp until I leave and no longer.

7. i got a "giveaway" serrated knive with a vacuum cleaner
and it's still in daily use, 12 years later. it's my favorite tool for tomatoes and bread

those cheapies can surprise you sometimes :bounce:

11. I love the dollar stores!
They can be great places for all sorts of kitchen stuff. Back home we get our heavy duty paper plates there as it's the only place that has them.
