Dinner at the Prophets-Beef lentil curry and steamed cauliflower |
|
Cross-post from the Lounge
This is Indian-style, but not actually Indian. Still, I consider it one of my more successful experiments.
Beef Lentil Curry with Rice 1.5 lbs ground beef ½ C. lentils 3 C. water 1 med potato, sliced 1 med carrot, sliced 1 med onion, diced 1 C. diced mushrooms 4 cloves garlic 3 Tbs. curry powder 1 tsp. cardamom 1 tsp. cumin 1 tsp. coriander 6 cloves ½ tsp. ground pepper ½ tsp. ground mustard ½ tsp. turmeric 4 sprigs cilantro leaves 1 tsp. sea salt ½ tsp. ground pepper 1/3 cup cream Juice of 1/2 lemon
Place ground beef, onion, carrot, potato, and mushrooms in a large deep skillet. Add water and garlic. Bring to boil, add spices. Keep boiling uncovered. When water is boiled away, stir in cream. Add lemon juice, stir, and simmer until at boiling point. Serve with rice.
Yellow Rice 2 cups water 1 cup rice 4 almonds 3 cloves ½ tsp turmeric
Boil water, add rice and other ingredients. Bring back to boil, then simmer until water is absorbed.
Buon appetito!

This sounds delicious, but in the rice, 3 cloves of what? garlic? And how do you prep the almonds - sliced, chopped, whole??
And... where oh where is the cauliflower?
Thanks, I'm going to have to give this a try, it really sounds great.

Cloves. Little things that look like apple cores. They're in the spice aisle.
The almonds are whole. I just throw into the water with the rice. They cook and soften along with the rice, and flavor it slightly at the same time.
The cauliflower I left out, because all I did was steam it. I use a rice cooker/steamer. put in 3 cups or so water, put the cauliflower in the bin, and turn it on.
