Fresh ground whole wheat flour makes great bread!
Just ate 2 pieces of still warm whole wheat bread made with whole wheat flour I ground at the store yesterday - DELICIOUS!

My local health food store has installed a wheat grinder - so I can get really fresh flour and it's cheaper per pound than in the store.

i would expect that fresh ground flour adds a whole new dimension to fresh bread. Lucky you to have that available!

2. Thanks for the welcome -
I read a lot more than I post (been on DU since 9/04 & don't even have 400 posts!)- I always enjoy the C&B forum and have gotten lots of good info.

The fresh flour makes a huge difference although it's hard to pinpoint exactly what it is. My bread has been good but today's loaf is lighter, slightly nutty/sweet, just YUM!

By the way, question about your online store - is it strictly tea or will you have coffee & coffee products?

I've been planning on getting a Swissgold filter from Amazon - if you'll be carrying these, I'll wait & order from you.

6. I'll be offering Numi and Harney's, but I have a local tea supplier
that you can get loose teas from where ever you want if you want to blend your own

Numi is a VERY cool company with a HUGE product line, herbals, whites, greens and blacks in really cool bamboo boxes.

next week I'm hoping.....

and you'll have a lot of addicts buying the stuff.

I don't know why people aren't importing that stuff like crazy. There are a lot of us here who think it makes everything else taste like brown water with cigarette butts floating in it.

Brooke Bond must want us all to drink that horrid Twinings stuff.

9. If you can find one to offer, passionfruit flavored blended for iced will
sell very, very well.

I've had raves on the one I blend, but there's no way I can go into large scale production.

7. I worked in a health food store with a stone grinder for flours
and super fresh flour really does make a difference. Those oils start to go rancid really fast. If you buy flour preground, pick a food co-op or health food store with a huge business so they turn over those 25 pound sacks really quickly. Freeze the flour if you're not going to use it that day or the next.

10. This is a grinder where I grind the wheat as I'm buying it -
the whole wheat kernels are in the machine and I grind it into a sack. It's great because I don't have to buy too much at a time - & luckily, the store is only 5 minutes away!

11. This was a big grinder in a back room
that we'd have to close off quick when the health inspector showed up. Oh, we kept it as clean as it's possible to with flour dust flying everywhere, it was just festooned with flypaper strips for the miller moths and looked bad (no insecticides in a health food store!). It used to be teamwork, one person distracting the guy while the other shut the door quick and pulled a piece of display furniture in front of it. They never caught on.

I miss grinding that flour at work and taking it home to bake immediately. There is nothing like ultra fresh whole grain flour.
