Sweet banana pepper sauce (Also called ensalada) |

My Mom made this when we were kids and we all loved it. It is a perfect topping for tamales. It is so good we used to eat it on top of white bread alone. Here it is:
Ingredients 3 sweet banana peppers 2 hot banana peppers(or some other kind - but jalapenos are too hot) 3 tomatoes 1/2 medium sized red onion finely diced 2 garlic cloves finely diced 1/4 cup oil(any kind you like - peanut, safflower, corn, vegetable) 1/2 tsp oregano 1/4 tsp salt 3 tsp brown vinegar 1 tsp water
Boil the tomatoes briefly and remove the skins. Dice them up small. Put the peppers on top of the gas burner on the stove and toast them until the skins turns mostly black. Scrape off the skin under running water. Remove the seeds and dice small.
In a mixing bowl put the diced peppers, tomatoes, onions, and garlic. Add the oregano, salt, and oil. Mix the water and vinegar together and then add it too. Mix together with a spatula.
As with any recipe this is just a base. Some people like more salt, some like less, you might want more or less oil or vinegar, or whatever. This is how I like it. Any feedback would be appreciated. Thanks...............bearfan
