I'm baking my weekly bread and cake to get us through the next week.

I think I finally figured out what I was doing to the poor dough while shaping that make it drop like a kicked souffle on the last rise. Mr. K loved the "munchkin" loaves but me... well... not so much.

I (for some odd reason) thought I needed to really punch down the dough and then kinda roll it and shape it to fit the loaf pans. I re-read bread101 and realized all it needed was to be gently flattened and then divided and put in the pans. I had it so punched down it was more like a 1/4 filling the pan rather than the 1/2 to 3/4 it should be.

It's rising now in the pans, we'll see how it turns out.....

and this week's dessert is a Spice Cake with Cream Cheese frosting.

anyway.... it's been a while since I started a thread and so my ego just had to do it

1. So glad you figured it out
May your loaves rise high above the pans from now on!

Spice Cake with Cream Cheese frosting... YUMMMM! That sounds fabulous. Mr. K is extremely lucky to have you taking care of him so well!

Enjoy!

3. How lucky can I get?
Coffee delivery right to my office? Wow, that is some kind of service!

Can't wait - I've been trying to talk myself into making the drive to AJ's all weekend before I completely run out. I'm so darned far out here that the only thing close to me for coffee beans is supermarket beans... generally stale, of course.

Looking forward to tomorrow,
