what was I thinking? what should I do with evaporated milk? for some
bizarre reason I bought a 6 pack of them at Costco

1. It's wonderful stuff
Use it to make mac and cheese for a remarkably creamy cheese sauce. It's great in bechemel.

I like it in coffee and tea

Make pudding with it.


It's good stuff and can substitute for milk in any recipe. It does have a bit of a "cooked" taste which changes the flavor of what your preparing a bit but I like it and usually you have a creamier texture as a result.

3. Sparkly uses it in her cuppa .....
She drinks Americanos and puts that in. No sugar ... just a long pull and that.

I use in my coffee when I use a 'go-mug'. Its too much of a pain to steam milk for a go mug, so i use that instead. It aactually has a similar flavor when in coffee.

Try one can and see if you like it.

9. It lasts pretty long.
Seems to last longer than regular milk for whatever reason.

I LOVE it in coffee, even though I know it's sort of unconventional in espresso (and people think I'm weird). Hey, we're all entitled to an idiosyncrasy or two!!

12. Oh, in coffee its wonderful!
An old boyfriend of mine used to make me what he called 'cafe evapee' LOL.

He would warm the milk a bit, add a little sugar and then beat it to a froth with the mixer. Then spoon it on top of the coffee a la whipped cream, and it was delicious!

I also use it a lot in my icing for brownies:

1/4 cup evaporated milk
1 1/2 squares of melted, unsweet chocolate
1/3 cup sugar

Put everything in the blender, on medium speed, and let it run for about 15 seconds. The blender will begin to make a different sound when the icing is just right.
Its really a ganache, but very fudgy, and perfect for brownies.

then whipped, like heavy cream. I had a recipe which used whipped canned milk. It was used in a pineapple pie. Not bad, believe it or not.Good in mac and cheese also. Bread pudding!!

8. Hot Chocolate
Evaporated milk makes a HUGH difference in hot chocolate. I mix it 2/3 to 1/3 water and use the recipe on Hershey's Cocoa (and add extra vanilla and a pinch of cinnamon.)

20. well, for one thing it keeps unopened for a long time. That ooey
gooey frosting for German Chocolate Cake contains none other than evaporated milk.

We used to make a dish we called "soapsuds"

You need an angel food cake, broken up into bite size pieces
a small can of lemonade concentrate thawed
a large can of evap milk, chilled extremely cold.

When I whip this stuff I use a metal bowl and freeze the bowl and the beaters, with the milk poured out in the metal bowl. Let it sit in the freezer until it has little crystals around the edges of the milk. Then beat it with the mixer until it gets nice and thick and fold the thawed frozen lemonade into the whipped milk. Then fold the chunks of angel food cake into that mixture and pour it out into a pretty bowl, preferably a nice clear one.

and you have to have it for Pumpkin Pie, and there are fudge pie recipes which call for it too.

And help me out here folks, isn't there a really decadent fudge candy recipe that uses Evap milk?

Here is their five-minute fudge

There is also a nice recipe for Fudge Sauce:

In a medium saucepan, melt 1/2 cup butter and 3 squares of unsweetened chocolate. Stir in 2 cups of sugar.

Gradually add in a 12 oz can of evap milk. Stir constantly until it comes to a boil.

Remove from heat and add 1 tsp vanilla.

23. Make Hot Cocoa
"in the cup method" (microwave)


1 heaping tsp cocoa powder
2 tsp sugar
pinch of salt

add enough evap milk to make a smoothe paste of this. (2 tablespoons?)

stir in milk to fill the rest of the cup and heat it all in the microwave.

otherwise, you can heat the milk in a pan and pour it into the chocolate mixture.
