Oh I just had the best lunch. Yesterday I made some curry chicken salad, used the canned chicken I get at Costco, mayo, curry powder, celery seed, chopped Granny Smith apples and raisens.
Wrapped in a lettuce leaf! WOW it was so good!

and I always keep some on hand (this is California, after all -- earthquakes and all that).
It's better with fresh roasted leftover chicken breast, but hey, when you've got a craving and don't want to go out, this works really well

I didn't add curry, used leftover chicken, and added walnuts and red delicious apples. Oh, and wrapped in a super fresh roll. Yum! I love it but do it rarely because I'm the only one eating this stuff here. :eyes: I'll have to try it with curry! :9

When there used to be Good Earth restaurants around (where did they all go?) my favorite dish there was their chicken cashew salad. I'd get it served on a bed of spinach and topped with the poppy seed dressing.
Oh yeah, that was good. I have managed to recreate a fairly good version of it. It has to have alfalfa sprouts, jicima, sweet pea pods (or sugar snap peas) in order to really work. But without the fresh house rolls they'd serve it with, it wasn't quite the same.
