Ideas for leftover beef pot roast? |
|
Hello all! I roasted a beef for Easter dinner that turned out soooooo yummy. Now I'm left with some leftover meat and was wondering if any of you have any good recipes for leftover beef? Thanks in advance :) :hi:

depending on how tender it is, stew for a chuck, strogonoff for the more tender cuts
also if I have taters left over too, I do a cottage/shepard's pie (Mr.K's favorite!)

add a bay leaf, some Lowrey's Seasoned Salt or Mrs. Dash, some basil, garlic, lots of cracked black pepper, some Worchestershire sauce, a dash of soy sauce, adjust as needed
if you have the juice from the roast, use it for a roux of flour to start or do some corn starch and water at the end to thicken or grate a potato into it

Throw it in a pot with some spicy V-8 juice, celery, potatoes, onion, and carrots. You can add can of broth if you'd like as well. Add a little pasta at the end. Yummmmmm.
Spicy V-8 really makes a great soup base! I add a little Better than Bouillion or broth to enrich it a tad. Great Product!

Or I might make BBQ beef sandwiches by simmering slices of the meat in a good BBQ sauce and then serving on some good rolls, maybe with coleslaw right in the sandwich too.

I made some in my crockpot a couple of weeks ago, and let the meat simmer in the sauce all day, soooooooo good :D

just mix the roast chunks with peas carrots, cubed potatoes, the leftover gravy and top with a pastry crust (or mashed potatoes if you don;t want to make pastry..bake it and YUMM

9. slightly different soup recipe |
|
cut up the leftover meat; trim off any extra fat dice potatoes carrots and celery add onion and garlic simmer in a pot of water with a can of beef broth added (don't forget to add all you leftover pan juice/gravy/dripping, fat skimmed of course
Let this simmer until potatoes are tender, then add:
frozen corn maybe a cup or cup & 1/2 frozen peas maybe a cup canned diced tomatoes zuchinni or yellow squash is nice frozen or canned or leftover green beans can of mushrooms if you like them let this cook a bit to blend the flavors and then add some finely chopped cabbage.1/4 to 1/2 a head depending on the size of your soup batch. Cook until the cabbage is just tender.
Serve with corn bread. YUM

I ended up making beef stew, and it came out sooooooo good! Thank-you all for your great recipes and tips. I only really got into cooking in the past year or 2, so I'm still pretty much a novice and sometimes have a hard time trying to figure out what to do with leftovers, now I have a lot of ideas thanks to all of my friends at DU! :toast:
