Ok, gang, any suggestions for a juniper berry substitute?
I am wanting to do a Karelian tenderloin (but not of venison).

1. Well, in desperation, I added gin to beef stock and reduced it...
The idea being that gin is flavored by juniper berries, and reducing it would concentrate the flavor.

It turned out ok, though I think maybe not as strong as juniper, perhaps I should have used MUCH more gin. Or maybe I should have drunk more gin and taken a more masculine approach to Karelian cooking by letting someone else do it :).

2. Just gin
I don't bother with the beef stock, just put in a little gin. And a little for the cook, too. :evilgrin:
