Quick question about quesadillas:
How do you cook them? Baked? If you fry/grill, do you use oil or butta? I'm thinking spinach and chicken quesadillas, but don't know the best method for cooking. Thanks!

1. I get out my cast iron skillet and plop the tortilla in there
then I dump everything on top and let it cook a few minutes (til the cheese melts). Oh, and I don't use any oil or butter. I have made 6 at a time on a pancake griddle. Same method.

3. Sometimes I do a quesadilla sandwich
sort of thing, fake chicken strips (not bad when you get used to the idea), salsa (or leftover enchilada sauce) and grated cheese between 2 tortillas, either corn or wheat, done like a grilled cheese sandwich between 2 hot cast iron frypans.

Cut into wedges and serve with a blob of sour cream. Heaven.

For best results if you are using the fold in half tortilla method; place the open end of the tortilla facing the back of the grill. It helps prevent leakage.

6. I heat the tortilla a little bit on a dry iron frying pan to soften it up
Then I roll the stuff inside, then heat it again.

The cheese *always* leaks out at least a little bit. :shrug:

7. i like a little butter to brown it up
melt a LITTLE butter in a big skillet

toss in the tortilla, top with cheese and goodies (in that order)

top with another tortilla (I butter the top of that one lightly too)

heat on medium til the cheese melts and it starts to brown up, turn over and heat til browned

slide onto a big plate, cut it like you would a pizza and scarf down
