Wow A recipe off the Bisquick Box that ROCKED! (with AZDD6 mods of course)
the origingal recipe:



Salsa Chicken Fiesta
Olé! Enjoy a chicken main dish that’s weeknight fast!

2/3 cup Original Bisquick® mix
2 tablespoons water
1 egg
1 1/2 cups shredded Cheddar cheese (6 ounces)
3 boneless skinless chicken breast halves, cut into 1/2-inch pieces
2 teaspoons vegetable oil
1 1/4 cups Old El Paso® Thick 'n Chunky salsa


1. Heat oven to 400ºF. Spray 8-inch or 9-inch square pan with cooking spray. Stir together Bisquick mix, water and egg in small bowl; spread in pan. Sprinkle with 1 1/4 cups of the cheese.
2. Cook chicken in oil in 10-inch skillet over medium-high heat, stirring frequently, until outsides turn white; drain. Stir in salsa; heat until hot. Spoon over batter in pan to within 1/2 inch of edges.
3. Bake 22 to 25 minutes or until edges are dark golden brown. Sprinkle with remaining 1/4 cup cheese. Bake 1 to 3 minutes longer or until cheese is melted; loosen from sides of pan.


I had no "chunky" salsa, so I chopped up 2 roma tomatoes, 1/4 red onion and 1/2 small red bell pepper and sauted them gently till soft then added regular salsa. I had no chicken breasts, so I used a large can of white chicken meat

topped it off with sour cream right before serving and ended up going back for 2nds!

7. it was pretty good!
I also changed it a little.

I didn't have enough salsa & was too lazy to go buy any. So I chopped some roasted pablano peppers & added them over the first cheese layer. Then I poured a can of enchilada sauce over the peppers.

I only used about 1/2 C. of salsa.

The recipe calls for 1 1/4 C Salsa

I used 1/2 C salsa + 1 C sauce = 1 1/2 C. so I was only 1/4 C over what the recipe calls for.
The peppers soaked up the extra sauce just fine because it wasn't runny at all.

10. Thanks for the Bisquick reminder
I used to make their recipes but haven't done it for years. This one looks good. I used to like the one with asparagus and cheese.
