Breaded Zucchini with Mizithra cheese |

I have died and gone to heaven, and my arteries were there 20 minutes before me.
I sliced up 4 of the zucchini I pulled off my plants (oops. Yes, plants. Three of them....) and dipped the slices in egg wash and then crumbed them with italian bread crumbs I made earlier in the year (the ends of a couple of loaves of bread, dried and crushed, with onion powder, garlic powder and powdered italian herbs, salt and pepper). I sauteed everything in a little oil until the slices were brown, then popped them into the toaster oven to keep warm while I did the rest.
I served it over pasta with a little butter and grated mizithra cheese.

I had an eight ball plant last year in addition to an heirloom black variety. The heirloom is a slow and steady producer and it was nice to have that supply. The eight ball plant dropped 'balls' faster than an arcade game. Eight ball is a great stuffing zucchini but not very good otherwise because of the oversized seed membrane. Never again!
I usually don't bread zucchini but I think I'll try your recipe.

DH didn't pick while I was out of town. The baseball bat was pretty tasty, though, and wasn't seedy at all... I'd hate to have seen what would have happened if I'd let it go any longer.

I slice them batter them with onion ring batter and rolled them in parm. and GASP fried them.
So good and so bad all at the same time
