Baby Carrots... what to do with em. (cooked) |

I have a bag of baby carrots and I want to do something with them, gotta be cooked my dental work can't take the raw ones.
I usually do a maple/brown sugar glaze and I'm totally bored with it.
Any suggestions? I googled a bit but nothing caught my eye.

But you might also think about eating them cold, cooked, marinated like this:
Dilled Carrots
1 pound fresh carrots, scrubbed 1 cup vinegar 1 cup water 2 teaspoons salt 1 1/2 teaspoons dill seed 1 garlic clove, cut in quarters 2 tablespoons sugar
Steam carrots, covered, over boiling water for about 4 minutes, just until tender-crisp. Drain. Place in a bowl or jar. In a small saucepan, combine remaining ingredients. Bring to a boil over medium heat. Reduce heat to low and simmer 5 minutes. Pour this, still hot, over carrots. Cover and refrigerate

It keeps the color and flavor but they aren't crunchy. They're sweet tasting and nothing more is needed unless you like a pat of spread on them.
