my wife says the cast iron must go
...ok, she's only referring to the 12" round Lodge griddle pan. On our electric stove it doesn't heat up on the edges and along with the heavy weight it's ticking her off. She really likes the Lodge grill pan, that one's a keeper.

So: it's getting sold for $10 to one of my best friends and former college roommate, who taught me most of what I know about cooking, and who is an excellent chef and gourmet. The replacement: a 10.25" round carbon steel crepe pan (www.mycookingstore.com, $17). It should fit the burner better and still avoids Teflon. I also scored a 1 qt enameled cast iron sauce pan on ebay the other day, so I'm still on the bandwagon :)

In fact, I finally used one of them last night, but only to heat up some leftover pizza.

I just leave them both on the stove, with a thin film of lard on the bottom, and look at them lovingly as I pass through the kitchen ::sigh::

What? That's weird? :)

Those two pans have inspired me so much that I acquired a cast iron deep skillet with a lid (someone was giving it away!) -- but it's all gunky and nothing like the two others. It's the ugly step child. So, I'm beginning the "reconditioning" of that one. I left it in the sink after a first round of scrubbing the rust off, and gazed at the beautiful black beauties on the stove, and had to take a break; and so it remains in the sink still, sharing it's rust with the sink.

I'm telling you, a fine cast iron pan is a thing of wonderment.

(cast iron on ebay? shipping must be outrageous! lol)

4. I've hung mine behind the sink!
They're sort on display, the rest of the pots and pans are in a low cabinet where our toddler can get at them for drumming.

6. see if you can have them bead blasted. sort of like sand blasting
but with smooth round mini micro beads. My ex bead blasted a coupld of rusty cast iron pieces and a rusty carbon steel wok for me and then I seasoned them well.

He worked in a place that did reconditioning/retrofittings for small aircraft, so you might find one in a body shop, or place that does auto painting.

Gas. You need a gas stove. ;-)

5. Alas, we rent, not own
And there's no gas service in our building in any case. However, since most apartments in the area use gas it's probably 75% likely our next apartment (planned for March '07) will have a gas stove.

7. Since you're moving in 7 months
stash that griddle in a closet. You'll appreciate it more on a gas stove.

When I looked at places to move to, I always looked at the stove first. I could deal with a crummy location, a bad neighborood, a place that needed work. I could not deal with an electic stove. They suck.
