Very easy Italian Chicken recipe

Very easy Italian Chicken recipe
I forget where I found this recipe. It sounds a little weird but we decided it tastes great and we'll make it again. It's so super easy.

I used maybe only 2/3 of a bottle of the salad dressing, substituted a can of the Muir brand tomatoes (with garlic & basil) for the fresh - the same brand politicat suggested for her recent garden sauce and I used a covered, round pottery casserole.

Italian Chicken

Ingredients:
1 red onion sliced
1 cup sliced mushrooms
1 can sliced black olives
2 sliced tomatoes
1 can artichoke hearts, drained and sliced (do not use pickled hearts)

Top with:
1 lb boneless, skinless chicken breasts
1 8 oz. Bottled fat free Italian Dressing
Sprinkle with 1 package of Lipton Onion Soup mix.

Preparation:
In the bottom of a 13x8 pan, spray with Pam cooking spray and then layer the onion, mushrooms, olives, tomatoes and artichoke hearts. Top with the remaining ingredients. Bake at 350 degrees for 45 minutes to 1 hour.
Serve over spaghetti

1. That sounds yummy, and easy! Did the chicken come out
nice and tender? This is one I will try, and I LOVE artichoke hearts!

You were asking about tender white meat the other day and this does come out tender. I cut the chicken breasts up in small pieces so they would spread around when we dug in. And I didn't even brine them beforehand. I used the Red Bird brand of natural chickens. They seem to be more tender anyway. I would have brined them but I forgot and then didn't have the time.

This recipe is mostly opening cans and spreading the ingredients. It's way easy. Oh, and it's not a thick sauce. It's the very watery kind with a tart flavor that we enjoyed for a change of pace. I might add more olives and chokes next time.

3. IMHO
Italian salad dressing makes a great marinade for chicken, right out of the bottle. I'll bet that tasted great.

4. That sounds good.
I have used the Robusto salad dressing (Wishbone) to marinate chicken pieces before grilling. It gives chicken a great taste. I have also used the Good Seasons packets to season chicken with. Just sprinkle the dry seasoning on the chicken.
