I bought some fresh catfish fillets

I bought some fresh catfish fillets
I'm thinking of doing them in a cornmeal/flour/egg dredge and frying them up

with the baking powder biscuit recipe Reciprocity gave me http://www.democraticunderground.com/discuss/duboard.php?az=view_all&address=236x24376#24409

what should I have with them? I have fresh crooknecks and tomatoes, red potatoes or rice or grits or what??? what is a good side? suggestions?

1. You need me as a side to help you eat them.
Seriously, I love mashed potatoes with anything homey. You can make them ahead and keep them warm in the oven. Once you start cooking the fish, you don't want to wait for anything else to get cooked.

4. Some suggestions.
Coleslaw, fried okra, corn on the cob, french fries, pork-in-beans and black-eyed peas with gallons super sweet tea and heaps of ketchup and lots of lemons for fish and tea.

We love Ranch Style Beans! I make this about every two weeks or so.


Camp beans
1 pound lean ground beef
1 large onion, chopped
1 clove garlic, minced
1 can (15 ounces) Ranch Style Beans
1 cans (10 ounces) Rotel Diced Tomatoes in Sauce


Cook ground beef, onion, and garlic in a large skillet over medium-high heat until beef is crumbled and no longer pink; drain.
Add beans, tomatoes and chili powder; mix well. Bring to a boil; reduce heat to low.
Cook uncovered for 10 minutes, stirring occasionally. Season to taste. Makes 5 servings.

Serve over rice with a side of corn bread.

But the mashed potatoes sound really good, too.

I've got some snapper thawing out. Sounds like a fishy night for us!

7. I plan to have some catfish this week...
...because I've decided to sacrifice some of the tomato crop while green to make fried green tomatoes. I plan to make it a feast with some sweet potato home fries and fried okra if I can get fresh okra here somewhere. I'll have the teenagers rolling their eyes in doubt, for sure.

Your mashed reds sound like a great idea. I like to put sour cream in along with butter. Some scallions and parsley minced would be great, too.

A rice dish that I like is this: To a pot of cooked rice add a small can of chopped green chiles, a cup of sour cream, nearly a cube of butter and some chopped scallions. It's very good.

Sounds to me as if you have the makings of a summer feast!

We had an odd thing here last night: watermelon cubes with balsamic vinegar, feta cheese crumbles, and fresh mint leaves.

11. sure, you could make the creamy rice..
...without green chilis if your Mr. doesn't like them.

The watermelon-balsamic vinegar-mint-feta salad threw me for a loop. I guess I just love watermelon too much in its natural state.

15. here's an idea I thought of. I have a can of pinto beans with jalpenos
by Ranch Style Beans and I'm thinking to cook the rice in the bean juice, then add the beans back in with your sour cream idea

:shrug: the worst that happens is I toss it if it's a dud right?

13. Okra? Okra!
Okay, I know okra isn't everybody's favorite, but I love it. Fried, smothered, pickled, stewed...

Easy to cut it into bite-sized pieces and sautee it at med-high with plenty of salt, some pepper, and other assorted seasonings. Bacon fat adds a nice layer of flavor. :-)
