My version of Wild Oats' Zucchini Salad
We got a small container to try it and then didn't pay too much attention till it was all gone. Here's what I put together and I think it's close.

2 small zucchini sliced in half and then into very thin slivers (not shredded)
1 can of black beans, drained and rinsed
1 small red onion diced
1 tomato diced
1 can of artichoke hearts (in water) drained well and chopped
1 can of pitted black olives drained chopped
S&P to taste

Toss everything together lightly
Drizzle with some bottled fat-free Italian dressing - less is better, a scant drizzle of olive oil and some fresh lemon juice or whatever you especially like. Just not too much.
Crumbled feta cheese is optional
