i baked up a meatloaf yesterday early and we ended up having hot dogs last night
so we are having meatloaf sandwiches off a fresh meatloaf
tommorrow i'll probably do up some twice baked taters and veggies to go with the rest of the loaf, so we are having the leftovers first, and the dinner second LOL

Made Ham and Corn casserole on Friday, man is it ever good!
(potatoes, green peppers, cubed ham, cheddar cheese, cream of corn)

it was delicious. The chicken was tender and tasty. I didn't make mash potatoes, rice is more my taste. I served the chicken with rice and salad. The sauce should be served as a gravy, and mushrooms would have been a plus.

I'm not fond of mushrooms but I think they would be a great addition to the dish.
My husband ate the leftover Lambrusco chicken for supper tonight. He loves the gravy. :)

I made your recipe, excellent. I think mash potatoes would have been better than the rice though, the sauce thickened for gravy.
