crab and salmon cake recipe ideas, anyone?
I have about a cup of crab meat and 1/2 pound of leftover cooked fresh salmon. I was thinking of making some sort of seafood cakes with them, but I'm not sure if I should combine the two flavors.

Anyone have ideas for me? I plan to coat them in panko and deep fry them, whatever I decide to concoct.

thanks

1. Gee, I don't know if it would work or not, but...............
if you send some over my way, I will be more than happy to taste-test them for you. Of course, it may take several tries to form an opinion, so send LOTS!!!

Mary :-)

2. I've never combined those two tastes together.
I love crabmeat cakes made from lump crab meat.

3. Maybe I just better keep them separate
Salmon might overwhelm the crab.

So now I have to look for TWO recipes instead of one....

4. Here's a crabcake recipe
In a large bowl combine your crab meat, finely diced onions, 1 egg, and whatever kind of breading you want to use. I like Progresso Italian seasoned bread crumbs but some people like crushed crackers or smashed up croutons. Season with whatever kind of spices you like. I have high bp so I shy away from salt, usually. Mix everything together real good and pat out your crabcakes. I usually fry them in a pan with about 1/8 inch peanut oil until brown on one side and then turn them over and fry the other side. I've never tried deep frying crabcakes like you mentioned.

6. I used yours basically
I added diced celery and some cajun seasoning and a bit of fresh ground ginger, and used panko for breading.

Deep frying for 3 minutes is perfect. My mother got me a wonderful deep fryer for Christmas a year ago and I just love it. The basket turns in the oil and the food is not remotely greasy. Even less so than pan frying.

thanks for your thoughts.

5. I do this ALL the time....
I often grill a big salmon fillet, which guarantees that there will be left over. I make a standard Maryland style crabcake recipe-- just google and avoid anything that's complicated-- but with 1/2 crab and 1/2 leftover salmon. It's excellent.
