Duck recipes - what do you do with a quacker? |

We found an independent supermarket that's not too far out of our way, and they had duck for an incredible price, under $10 for something that will feed us both for at least three days. I normally use left-over duck in soup with soba and Japanese vegetables, but I've been trying to think what to do with it for the first meal. We had goose with wild rice stuffing a couple of weeks ago (a friend gave us one he shot) so I was going to skip the wild rice stuffing since Mr. Pcat is not a rice fan.
Any ideas?

...and I also had a new Caribbean cookbook to consult before I wrapped it to give away. The upshot was this:
Brown the duck very well in oil.
Put in spices: cinnamon, cloves, cumin, garlic, salt pepper. Add a diced onion, half a dozen quartered yams, two cups of red wine, a couple of bouillon cubes. Simmer till tender. (It took a couple of hours.)
It was delicious. The sweet potatoes were sooo good.
On edit: of course this could screw up any plans for using leftovers for Japanese food. But a nice stew can be the end product.

Try the mahogany duck recipe at eat.epicurious.com
Very authentic and delicious and rather easy as I recall. Would go great with soba noodles the next day.
