eggs and grits for breakfast-- in praise of cholesterol.... |

My daughter and her boyfriend recently visited me from Georgia, and they brought me a couple of packages of stone-ground grits.
Microwave for 5 minutes on high, stirring occasionally:
1/3 cup yellow or white corn grits 1 1/3 cup water 1/8 tsp salt
Start the grits first so they can sit and thicken while you're preparing the rest of the breakfast. It takes about ten-fifteen minutes or so to get this on the table.
Fry 3 strips of bacon over medium heat until they reach your preferred crispness. Drain the bacon on a paper towel.
Add three eggs to the bacon grease and cover the skillet. Fry the eggs over medium low heat until the whites are just done and the yolks are good and runny.
Spoon the thickened grits onto a plate, top with a little butter, and cover with the sunny-side up eggs. Season with salt, pepper, and a sprinkle of Tabasco sauce. Serve with the bacon and hot coffee.

cheddar, fresh ground pepper and a bunch of butter. Stir it all up and have toast and bacon on the side :)
decadent and I love it
