My local newspaper had a feature in November interviewing a group of Jewish grandmothers about their latkes. Here's the recipe they agreed on:
3 pounds russet potatoes (about 7 medium) 1 large onion 4 eggs 3 tablespoons all purpose flour salt and pepper vegetable oil for frying.
Peel potatoes if desired (recommended if skins are thick). Grate potatoes using medium hole on the grater. Squeeze as much liquid from the grated potatoes as you can (using hands or rolling them in a towel). That's a critical step.
Grate onion. Add to potatoes and mix well. Add eggs and mix well. Add flour and mix well. Add salt and pepper and mix well.
Heat about 1/4 inch of oil in a frying until very hot -- not quite smoking. Shape potato mixture into patties. If the mixture seems wet as it sits, squeeze out excess moisture before making into patties. Drop into hot oil. Flatten with spatula if necessary. Do not cover.
When latkes become brown around the edges, flip carefully. Cook another 2 to 3 minutes, until bottoms brown. Remove to drain on paper towels. Serve with salt and pepper, applesauce and sour cream.
