Beef Roast Braised in Beer and Honey |

I found this long lost recipe that I would frequently make years ago. A favorite! This makes eight servings.
3 lbs beef round or rump roast olive oil 2 tablespoons flour 1/2 cup of beer salt to taste (let it get a little flat) pepper to taste 1/4 cup each, honey ,soy sauce 2 tablespoons cornstarch
Combine flour, salt, and papper. Coat meant. Brown mean on all sides in olive oil in dutch oven. Remove meat, pour off drippings. Stire in beer, honey, and soy sauce. Add meat and baste with sauce. Cover; bring just to boiling, lower heat and gently simmer about 3 hours, or util done. Remove meat and keep warm. I would baste the meat during the cooking.
For 2 cups sauce, pour pan liquid into 2 cup measure. Add enough beer to make 1 1/2 cups; return to pan. Blend cornstarch into 1/2 cup cold water. Whisk slowly into plan liquid. Bring to boil, stirring constantly; cook until thickened.
Mash potatoes goes great with this.
I played around with the recipe, If I remember correctly I usually added more honey. I am also one that does not like gravy or sauces made from cornstarch so replaced it with flour.

I love using beer as a braising liquid. I got my husband to try poaching his Italian sausages in it like some folks do with Brats. Now he's addicted to using beer in cooking. :-)
I will definitely be trying this one. Thanks!
