Enchilada-ed Burritos

Enchilada-ed Burritos
I love Mexican and Italian food so my burritos are mostly Mexican with some Italian influence.

I get canned refried beans and store tortillas and salsa.
I brown ground beef, sautee onions, green pepers, garlic, and mushrooms.
Mix with a large can of refried beans, large pitted black olives (sliced), salsa, beef and the veggies. Also add grated cheeses (cheddar, colby and/or monterey jack)
Wrap the mix in the tortillas with cheese.
Put canned tomato sauce (I have also used canned tomato soup or leftover spaghetti sauce) that I doctor with chili powder, garlic powder and Italian seasonings in the bottom of the pan and then cover the burritos with the same and grate cheeses for the top (same cheese/s as above).

I usually make spanish rice as a side dish, and last time added a little leftover rice to the bean mixture for the burittos.

Any suggestions on additional veggies? Has anyone tried chicken? (It doesn't sound appetizing to me, so I've chickened out on substituting chicken for ground beef, so far). I may try hot Italian sausage instead of beef one day, though.

1. Ever been to Baja Fresh restaurants?
They make burritos into enchiladas, too. They use a brown rice mixture with fajita-style grilled red and green peppers & onions inside the burrito. Sauce, cheese, etc. outside. It's really quite good. Grilled chicken or steak can be added.

2. Mmmm - I think I know what I'm making for dinner tomorrow.
We don't eat a whole lot of red meat, so I just might try it with chicken - I'd think it would work fine that way. Campbell's makes a tomato ranchero soup that will be perfect for the sauce. We are trying to cut carbs, so probably will omit the rice and substitute a green veggie for the side dish.

3. I like just plain beans & veggies w/o meat
but hubby likes the ground beef. Salad makes a great side dish. I also like sour cream on the burittos.

4. I'm not a big sour cream fan.
My vice is extra cheese! I don't seem to have any refried beans in my pantry, but I do have a can or two of black beans. Maybe I'll substitute them for the refried beans if I can't get to the store tomorrow (3-foot snowdrifts!)
