Anyone here working on fitness and nutrition?
I know some great recipes are really decadent and not exactly healthy, but I have discovered some of my favorite HEALTHY recipes since I have been working to losing weight.

One of my favorite easy, yummy dishes is pita pizza. I buy whole wheat pitas, then top with sauce, lots of veggies, maybe some chicken or canadian bacon, and mozzarella and pop it in the toaster oven. It's a great diet-saver, because it fills my pizza craving while still being healthy.

Homemade chicken veggie soup is another of my diet favorites, because I can freeze it in single servings to bring to work for lunch. For that, I boil 3 or 4 bone-in chicken breasts with a couple of bouillion cubes in enough water to cover the chicken. I add a sliced Healthy Choice Smoked Sausage link, bay leaves, garlic, and some Tony Chachere's seasoning. I add a quartered onion, some chopped carrots, celery, mushrooms, spinach, and/or any other veggie you like, and a can of diced tomatoes. Remove the chicken when cooked through, cool, pull of the meat and add back.

The cool thing about making soups is that once you feel comfortable with a couple good recipes, it's easy to make things up as you go along, so you can use whatever you have on hand. This year, soup has become one of my favoite things to make:-)

The white chili recipe posted in this group looks wonderful and very healthy too, and I will be trying it this weekend.

Anyone else have some favorite healthy recipes? Moderately low in fat, or with good fats, whole grains, lean meats, veggies, etc?

I'm at a stage where I need to add more variety to my diet, or I will get bored with it, so I thought I'd ask for your favorites:-)

1. not this winter, but after all these yummy recipes I figure come spring
i'll be beggin for some lo cal lo fat recipes LOL

i'll watch this thread for motivation :)

4. I've done really good this winter... I have been
making soup like CRAZY since Thanksgiving! I seem to have developed a soup addiction! I have been making turkey veggie, sopa de lima, chili, chicken and sausage, and recently, white chili, as posted here. All those recipes are pretty healthy, and really yummy! I htink this has been both my healthiest and tastiest winter in memory!LOL!

2. Portabello mushroom stack
(Got this from weight watchers)

One whole portabello mushroom with the trunk removed.

Brown in olive oil.

Put on oven-proof plate, stack with one slice of tomato and a slice of low fat swiss cheese.

Put in toaster oven until cheese melts.

I like things I can cut and this is really quite good as a meal.

I need to cut things too. Comes from growing up in a VERY meat-eating household! If I can't cut it, and it ain't soup, it was just a snack!:-)

Actually, eating a balanced diet is the most sensible thing to do. There was a thread a while ago about diets. They come. They go. We, on the other hand, tend to be constant.

Eat ..... it ain't poison!

My Dad used to say ... better to pay the grocer than the doctor.

That's why I try to remember to use words like "nutrition" more often than diet. I am trying to keep a healthier way of eating for good, rather than diet short-term. One big factor is prevent the habit of falling back on convenience foods and fast food. So, that is why I am so happy to have this forum for new ideas on what to cook:-)

7. One of my favorites is Italian Beans and Greens....
...served with wholewheat pita or ciabatta bread....this is so simple and so yummy, even my children love it when I make it.

Cook dried or warm up canned white beans in a saucepan. I then use a mixer/blender to puree this right in the pan. Add the juice of one lemon (I like more sometimes), salt and crushed red pepper flakes to taste.
Meanwhile, in a skillet, heat olive oil, add several chopped or crushed garlic cloves, then add any fresh cleaned chopped greens to this and saute for just a few minutes until bright green and fragrant.
Here we use endive often for this dish - slightly bitter but in combination with the other ingredients a specially delicious taste.

Take a bowl or plate and spoon some greens in the center. Make a little nest in the middle and pile some bean puree into this.

Serve with warm bread.....

Mmmmmmmmmm think I'll be making this almost instant dinner soon.

8. mmmmm... sounds interesting!!!
What kind of white beans? Like Great Northern? That sounds like it would also be good to spread inside the pita and eat on the go!

9. lol...I am eating this for dinner tonight!
I would guess that a Great Northern or Navy would be good in this recipe....and yes, it would be very good stuffed into a pita with greens or salad for on the go IMO.

It is more delicious than one would think looking at the recipe for some reason.....the garlic and crunchy greens taste almost sweet alongside the tart lemony, peppery and creamy beans.

I also try to use organic foods in this, but good even if not!

Very inexpensive dinner too, don't you think?
