I've been away from this group for too long.
I need to be back. I went through a period this last year, following a move and other difficulties, and had given up cooking for a while, which is a shame because it's something I love. Slowly coming back, ready to cook or help cook. Looking forward to being with all of you.

3. I've also been missing |

I had knee surgery in October and then gave myself a killer writing schedule to stick to. I'm still trying to produce 5,000 words per week and am back at my job.
I gone one of Lidia Bastianich's cook books, though, and am loving it.

I was wondering where you've been.
Lidia's cookbooks always make me want to cook, especially "Lidia's Italian Table" with its great fava bean recipes.

I've missed DU and C&B. Unfortunately, work and writing are keeping me crazy busy.
I did make up a pasta recipe that I'll post. It came out really good.

I hope you're pretty much healed and done with the rehab. It's good to have you back.

Somehow, the muscles that govern my balance got atrophied. Or maybe, it was because they got moved around during the surgery. So, even though I can walk without pain, I can't do it very far without some kind of support.
Getting old is bad, but I guess it's better than the alternative. :)

4. I feel your pain. My kitchen is in a total uproar |
|
as I clear cabinets and start to go through redundant equipment in preparation for either gutting the thing and redoing it or saying "screw it" and moving it all to Mexico. Cooking anything complicated is out of the question because every surface is choked with STUFF.
Tomorrow's trip to the thrift shop should get rid of the boxes on the floor. That will help a little. Then I start filling more boxes.

Do tell! I had no idea you were considering that option. Down there an outdoor kitchen is even a possibility in the right circumstances.

15. Mexico has national health insurance |

and, given my record with Kiva, I should be a shoo-in for a permanent residency there. Well, my record with Kiva and my net worth. I've got most of the paperwork assembled and all I need to do is find a citizen there who can be conned into writing a letter verifying my good character.
Mexican cuisine is absolutely outstanding, one of the most varied in the world. I've been scratching the surface of it here in NM, and my "salsa Gringa" had everybody at work totally addicted.
Right now I'm tied down with doctor appointments here, post op appointments I can't miss. I should be able to travel by April, though, and start exploring the region for a place to land. Online, I like Merida about the best, but I don't like the climate.

5. I live vicariously through y'all's kitchen experiences. |

I could be a good cook but don't have (or haven't made) the time. I don't even get home until after 8:30 four nights a week. But I am interested in proper nutrition and there are a lot of good ideas for simple dishes, too. Plus I feel better after visiting this group! And no calories from reading! :)
