any good online resources for spelt flour?
I found this great recipe for spelt bread, but can't find the flour locally..
http://allrecipes.com/Recipe/Very-Simple-Spelt-Bread/Detail.aspx

INGREDIENTS
8 cups spelt flour
1/2 cup sesame seeds
1/2 teaspoon salt, or to taste
1 tablespoon blackstrap molasses
2 teaspoons baking soda
4 1/4 cups milk

DIRECTIONS
Preheat the oven to 350 degrees F (175 degrees C). Grease two 9x5 inch loaf pans.
In a large bowl, mix together the spelt flour, sesame seeds, salt, molasses, baking soda and milk until well blended. Divide the batter evenly between the prepared pans.
Bake for 1 hour and 10 minutes in the preheated oven, or until golden. Placing a tin of the same size over the top of the loaf while baking gives it a lovely crust.

1. Bob's Red Mill
A very fine supplier of grains of all sorts, including a various grinds of spelt, located in Portland. I highly recommend them, very reliable and high-quality mill.

Or you could try King Arthur Flour - also a good company located in Vermont

2. Whole Foods/Wild Oats usually carries it.
They have quite a few stores in TX but I'm not sure if there is one in the area you live:

3. I buy it from the Amish.
I'm only 3 hours from Lancaster, PA.

Country Pantry sells it online.

It's called White Spelt Flour.

4. There are Amish and Mennonite stores all over the place
The trouble is, they're often small and don't advertise so they can be hard to find. But they're best for baking supplies:-)
