Dessert for my sweetie this week. |

I made homemade brownies today and swirled in some cream cheese icing I had left over from the carrot cake I made last week. Also cooked up the base for some hazelnut coffee ice cream. It's chilling in the fridge while I made dinner (which is nothing particularly special tonight.)

He's a pretty special fella. And a chocoholic addicted to coffee so it was a no-brainer. LOL

and use it to make truffles once in awhile. Been a while tho. You can't do anything worse to him than I already have! LOL I totally spoil him with goodies. But if you have one with coffee and chocolate, I would love it if you would share it. That would totally rock his world, I think.

12 oz. chocolate (semisweet or bittersweet) chips or bars chopped into small pieces 3/4 C. strong black coffee 1/2 Lb. butter diced
Dice butter into 1/2" pieces and chill. Melt chocolate in the coffee in sm. saucepan stirring constantly over low heat. Allow chocolate to dissolve completely. Remove pan from heat and beat in butter, one chilled piece at a time. Beat until mixture is smooth and no streaks of butter remain. Chill until ready to use. Frosts a double layer cake or makes truffles. Option: I sometimes add a liqueur; Mr. Pup favors Frangelico. Cointreau or Kahlua (extra coffee flavor!) is also very nice. (I've never measured how much, a tsp., a dribble, a skosh...)
Best if left to ripen for 24 hours in the refrigerator to allow flavors to develop.

Thank you! And I do have Frangelico. I use it in my tiramisu instead of rum. Gives it a better flavor. Mr. Pup has wonderful taste. :)

When I made Martha Stewart's carrot cake a couple of months ago, I had a HUGE amount of cream cheese frosting left over. I stuck it in the freezer. Now I can get rid of it.
