Pastrami - good for just sandwiches, or ...?
I have some pastrami from Costco that is very good (it's not the Carnegie one, although I've tried that in the past and it's good too) but the thing is, what else can I do with it besides making a pastrami sandwich?

I need ideas. Thanks! :hi:

1. "Pastrami and eggs pancake style" is a Joisey diner...
breakfast staple.

There's always that Reuben, although I suppose you could call it a sandwich. But, what a sandwich!

Pastrami is just another meat, after all, so use it like you use meat.

Use it instead of bacon for breakfast.

Why not pastrami lasagna?

If nicely sliced London broil is a amin course, why not nicely sliced pastrami?

And so on, until it is gone. Then you get more.

There really are no rules-- if it tastes good, it is good.

2. Ok, I'm feeling that
Eggs was really the only other thing I was thinking too. Well, besides potatoes, like a colcannon type dish. But beyond that, I just came up blank.

I might have to put the rest down in the freezer until I can think of something compelling to do..

Pastrami and Cheese Soup - Make your favorite cheese soup and ad chopped pastrami. Yum.

4. Could you maybe make
corned beef hash just subbing pastrami?

Even if it were only good for sandwiches, that would be good enough for me! :9

5. Yeah, I bet it plays well with taters
I know, it's great for sandwiches, but y'know, getting it at Costco means a ton of it (well, 2 lbs anyway) and I was just contemplating alternatives and was surprised when I couldn't think of too many.

6. I would end up

killing myself with that much pastrami. It's so hard to pass up.

Editing to add: Even tho it's still a sandwich, it's really hard to beat an everything bagel, toasted with a shmear, a slice of red onion and either hot pastrami or corned beef. My favorite sammich of all times! :9
