I got a new cookbook last week ("The Sober Kitchen") and she had a recipe in there I tried tonight
in a covered microwave safe pan place two salmon fillets (4-6 ounce)
salt and pepper to taste, pour 1/4 cup of Italian Dressing over and microwave with cover, 7 minutes
remove fillets, add 1TBSP butter and stir into juice until melted, pour over fish and serve immediately

I served it with Mahatma's Saffron Yellow Rice and fresh steamed asparagus
AWESOME!
and on the table in less than 30 minutes!!

It really is amazing how mind expanding freshly cooked good foods can be! And that does sound yummy!
Try this one on him sometime. Place salmon fillets in a shallow bowl and cover with half a bottle of SoyVay Veri Veri Teriyaki (shake well first to mix up all the sesame seeds and minced garlic.) Add some freshly grated ginger (lots!) and a just little bit of minced cilantro (a little goes a long way!) Cover and place in the fridge to marinate for several hours.
Place in a cast iron skillet, skin side down, and pour marinade over it. Either place it on a hot grill with an aluminum foil tent or simmer on cooktop until flaky. Serve with rice of your choice and either broccoli or asparagus with fresh lemon juice squeezed over them (the veggie and rice.)
OMG! It really is incredibly good! I could eat it every week.
(In my mind, I call my husband Mr. Coffee. He can't live without it and he can't seem to make a pot or even just drink it without it winding up everywhere! :eyes: )

If you have one in your area, they may have it. Heck, I even bought it in MalWart once before we stopped shopping there.
Being the husband is becoming more adventuresome, I guess that moniker may not stick much longer.

you can always mix soy sauce, brown sugar, a little pineapple juice, a whole mess of minced garlic and sesame seeds. That'll work.

They have a number of pre-made marinade options there. I unusually make my own, but it is nice to have a few pre-made options for those crazy nights when I am really pressed for time.

Loved by all at my house. If I don't have salmon, I substitute chicken breast or firm tofu, but the salmon is the best.
I put the rice on in the electric rice steamer, go out and do errands, then cook the salmon on the Foreman-type counter top grill and the veggies in the microwave. Lightning fast meal, and good use of all my fav kitchen gadgets!
