Happy Halibut Day
I'm getting my first for the year fresh Alaskan Halibut today. So many decisions. Grill, Bake, Kabob....Teryaki, Wine Sauce....Steak, Fillet? Although I love most fish, Halibut fresh off the boat is my very favorite. I'm so excited :bounce:

1. I still love halibut best...
...with buttered bread crumbs, lemon and a bit of dill weed. It's really out of sight here right now. $17 per pound. Haven't had any.

3. Still Pricey here in Seattle area too. I got steaks for $9.99lb
The fillets were 12.99 a pound. It's certainly a "treat" meal for us but one I allow us to spluge on. I'll cut back in other areas just don't take my Halibut or Salmon away.

2. My favorite!
I had some from Costco that I allowed to thaw in the fridge, forgot about it for a day. Even though it still smelled light and fresh, I was a little concerned about fishy flavor, so I coated it with Italian dressing and breaded it with panko and seared it on both sides, finishing in a 400 degree oven.

I shouldn't have worried. It was light and wonderful, served with sides of asparagus and a potage Parmentier.

It would have passed muster in Boston. I'm getting more the next time I do a Costco run.

4. I'm cooking mine in wine and butter with capers.
I'm doing an asparagus risotto for the side and a Caesar salad.
