Okay guys, I need some help here. |

I bought several small jars of tomato pesto on close-out. Heck of a deal, but I have no idea what to do with it.
FYI the ingredients are Olive oil, sun dried tomatoes, nuts and spices. It's kinda sweet and the tomato flavor is what you'd expect from sun dried tomatoes.
Recipe suggestions?
It's Bella Sun Luchi brand.

1. I can think of a few things |

You can just mix it with some pasta...a little will go a long way.
You can mix some up with some butter and cream cheese and use as a spread on grilled bread or toasted sandwiches
You can add it to a sauce to enhance the flavor
You can add it to chicken or veggie broth to make a lovely soup
You can make a white sauce based lasagna but use it for one of the layers for a kick
Mix it with cream for a lovely pink sauce for pasta or fish
Combine with some EVOO and some wine or balsamic vinegar for a salad dressing
Mix with sour cream and mayo for a dip for crudites or even pita chips--thin it out a bit and you could use it as a creamy dressing.

We usually just grill some chicken (or hear your favorite veggie chik'n substitute) and cut it into bite-size pieces and toss with angel hair and the tomato pesto. Very, very yummy!
