1. I'll bring kidney bean salad and cheesecake

1 (1 lb.) can drained kidney beans
1 1/2 c. chopped celery
1/2 c. chopped sweet pickles
1/4 c. salad oil
1 tbsp. chopped onion
2 chopped hard cooked eggs
2 tbsp. vinegar
1 tbsp. pickle liquid
1 tsp. salt
1 1/2 tsp. prepared mustard
1/2 head of lettuce

mix all ingredients except lettuce, chill and serve on lettuce bed, garnish around the sides with tomato wedges


and I'll have to think on which cheesecake to make :dilemma: :rofl:

INGREDIENTS
2 tablespoons unsalted butter
1 small onion , minced
2 medium cloves garlic , minced (about 2 teaspoons)
3 cups heavy cream
1 cup whole milk
4 sprigs fresh thyme
2 bay leaves
2 teaspoons table salt
1/2 teaspoon ground black pepper
4 pounds russet potatoes , peeled and cut into 1/8-inch-thick slices
1 cup shredded cheddar cheese (about 4 ounces)

1. Heat oven to 350 degrees. Meanwhile, melt butter in large Dutch oven over medium-high heat until foaming subsides, about 1 minute. Add onion and sauté until it turns soft and begins to brown, about 4 minutes. Add garlic and sauté until fragrant, about 30 seconds. Add cream, milk, thyme, bay leaves, salt, pepper, and potatoes and bring to simmer. Cover, adjusting heat as necessary to maintain light simmer, and cook until potatoes are almost tender (paring knife can be slipped into and out of center of potato slice with some resistance), about 15 minutes.

2. Remove and discard thyme sprigs and bay leaves. Transfer potato mixture to 3-quart gratin dish and sprinkle with cheese. Bake until cream has thickened and is bubbling around sides and top is golden brown, about 20 minutes. Cool for 5 minutes before serving.

Saute onion and garlic, chopped bacon. Add to sauce of chili sauce, molasses, vinegar, mustard, brown sugar. Mix into 4 cans of pork 'n beans. Put bacon on top and bake for an hour. Yum. Yum.

17. This is all sounding very good.
We're having quite the spread here! I still haven't decided what I'd make. I know, as the hostess, I should have a main dish as someone (ahem!) upthread mentioned, but I'm hard pressed to figure out what that would be. Maybe I can figure out something with the bison roast I have coming from the food co-op in a coupla weeks.

30. I found my saved recipe
The photo I snitched fro the web. ;)

Recipe:

Cold Beet Soup

2 cans of julianned beets with the beet juice, chilled
1 medium diced onion diced
1 large diced cucumber, seeds removed
small container of sour cream
2 of the soup cans of cold water
dill to your taste - I use a tablespoon of the flowers
salt to taste

combine beets, cukes and onion
mix one can of water with the sour cream and whisk to soften the sour cream
add this to the vegetables
add more water to thin it to a soup consistency
add the dill
chill the soup and then add salt to taste

This soup tastes nothing like beets do when they're hot. The dill makes it have a heavenly fragrance and the color is very pretty.

Thanks for getting it going.

I think you'll like having this soup outdoors on a hot day. Btw, it's pretty good when the potatoes are hot. And when I make the hot soup in the winter, we have the boiled potatoes chilled. Funny, but they really do go good in each instance.

36. no pot luck is complete without deviled eggs and a lemon lime jello salad
so I will bring those.

My lemon lime jello salad has crushed pineapple, cream cheese, cool whip and nuts in it. I have also made it with cottage cheese instead of the cream cheese and coolwhip.


There is a pair of brothers in law in my Sunday School class who will clean out that salad all by themselves.

And since we only have 1 dessert so far, I will bring some kind of sweet.

Probably a pound cake, chocolate maybe?

My husband's family has always stuck me with making the deviled eggs for years because they like mine better and I have to make tons for family gatherings because they really suck 'em down. I've gotten out of it now, tho. We get farm fresh eggs now and they are too hard to peel.

And I really do love lime jello. (Shhh! don't tell anyone.) I haven't eaten it, or any other jello, in forever!

Funny thing, one of our friends shudders at jello molds and salads because it brings back nasty memories of when his grandmother used to make them with lime jello and Veg-all. :puke:

38. yeah, VegAlll could kill most anything LOL. Friend needs to try mine. I use one lemon and one lime
jello to make mine; nicer taste. I use less water too because the pineapple inhibits the jelling and I want it to be solid.

so here goes:

1 each lemon and lime Jell-o, small boxes
8 oz cream cheese softened
1 small container cool whip, thawed
1 small can crushed pineapple drained (you can use more if you like of course)
cup of chopped pecans

make the jello but use 1 cup less water than directions on box ( I think it is 3 cups total instead of 4)
let sit in frig until sort of thick; like egg white consistency or a little thicker

cut up the cream cheese and combine it with the thickened jello and beat it with mixer until smooth, no lumps
stir in the pineapple, nuts and coolwhip

pour into the jello mold of your choice and chill until firm.

This fits very well into a 2 or 2 1/2 quart Pyrex casserole dish, and is very pretty when chilled in a mold


I used to hate making deviled eggs until I acquired a mini ice cream scoop! It is perfect for filling the egg halves. I got it originally to use for scooping cookie dough on to the cookie sheets, but it is great for the eggs.

43. Carrot cake with everything and topped with cream cheese frosting.
Everything means chockful of fresh grated carrots, crushed pineapple, coconut flakes, pecans, and those big yellow raisins. Washed down with a steaming mug of coffee from the standard big company coffee urn in the corner on the table.

salad:

4 tomatoes, in wedges
1 cuke, sliced thick
2 green peppers, sliced thin
1 red onion, sliced real thin
20 Kalamata olives
1/2 lb. feta, crumbled

dressing:

1/4 cup red wine vinegar
1/2 cup good olive oil
1 - 2 tbls. oregano
1 clove garlic, minced
salt & pepper to taste
