Can I simultaneously bake game hens and scalloped potatoes?
Hmmmm...Making Cornish Game Hens later today, and I SO want to have scalloped potatoes too. So let's say I make the hens in my 9 x 13 Pyrex, and make the potatoes in...I have no idea yet. Lol.

Help! I really want to make them both!

just make sure you have the taters cut to the right thickness so they'll cook in the same timeframe and both dishes need to rest about 15 minutes before serving so it works out great.

pull the birdies and taters, and make a salad while they rest


works every time!!! (here's a trick, be sure the taters are in a microwave safe dish so you can finish them off in the zapper if they didn't get done in time)

edit to add, one bird is enough for hubby and I usually, so save your big pyrex for the taters. unless sniffa is a really big eater!

2. What type of dish do you recommend?
Should I just pick up a 2 qt pyrex casserole dish when I'm out?

I'm thinking the hens, scalloped taters and steamed asparagus. :9

Oh, and how thick? 1/8th?

and I don't know inches, but slice the taters fairly thin, like the thickness of a cardboard box

4. Yes, about 1/8" thick
Use a mandoline or food processor with a slicer blade (if you have one or the other) to get evenly sliced potatoes.

If you don't already have a favorite recipe, the posted one last night in the Virtual Pot Luck thread that's outstanding. You boil the potatoes for a few minutes first in chicken broth, then finish them off with some cream in the oven. It saves baking time and the potatoes are quite flavorful and delicious.

I love game hens, sounds like you've got a terrific meal coming up! Hope you both enjoy.

I've never had double ovens so I've done that sort of thing more often than not, a real challenge back in the days of apartment sized stoves.

We just got rid of our apartment-sized stove a couple of years ago. Thanksgiving dinners were a real juggling act!
