1. Yes, I have seen this bacon flavoring here in our stores
It had a very scary content label. I passed since I wasn't convinced that the evil fake bacon flavor was any better for me than the evil real bacon. They also make bacon flavors like Hickory or Maple bacon. I don't remember the brand name.

3. To be honest, I can't really think of an application for it (yet)
It's the concept that intrigues me. I first saw this done on some FoodTV challenge where the chef used some magical powder to turn olive oil into a powder, which he then used in some dish.

Apparently, when it hits the tongue, it melts and is supposed to be quite interesting.

Now me, I would much rather do something with butter, or maybe even ghee, and spice it up or something, and sprinkle it on corn on the cob. Or popcorn.

The powder is tapioca maltodextrin, and I got my hands on some today :evilgrin:

Got it from LeSanctuaire.

This is also a good source of cooking items, although they don't carry the maltodextrin (tapioca starch is not the same thing)
