Yummy! Stuffed Cabbage soup |

I don't know where this recipe came from originally, because it's handwritten on an index card, but it's become a real favorite. It does taste just like a cabbage roll, but a lot easier.
Brown 1-2 lbs stew meat in a little oil. Add a bag of coleslaw mix (although I just chop up my own cabbage and carrot) and 1 large chopped onion and sautee a bit. Add 2 cans beef broth, 1 cup water, 1/2 cup light brown sugar, 1T lemon jucie, 1T Worcestershire, 1 large can crushed pureed tomatoes, 1 small can diced tomatoes, a little salt to taste. Bring to boil, then add 1/3 cup of uncooked long grain rice. Cover and simmer until you think it is done and meat is tender. (At least an hour, but I always want stew beef to be totally tender and hate it when tough meat spoils a stew)Like most things, better the day after you make it. This makes a big batch. Hope you like it.

I even make cabbage rolls the easy way layering seasoned ground meat with shredded cabbage and the other ingredients. So long as it tastes the same, I say go for it. Your soup recipe is on my agenda. Thanks!

Just what I need for this weekend, with snow predicted to fall on the blooming tulips. The teens may not be thrilled, as they are suspicious of cabbage soups after spending a couple of summers in a little village in Transylvania. But it sounds great to me!

My dad just loves it.
Upon reflection, it could use possibly a little more rice. The rice essentially cooked away to nothing. Maybe have some cooked rice on hand - smacks head! OMG, I just remembered that the first time I made this I came to the same conclusion that it needed more rice but I happened to have leftover Chinese take-out white rice on hand and put some of that in it.
OK, it definitely needs more rice, but I think put in cooked at the end to get the consistency you want.
