Pseudo Chicken Noodle Soup! With a pic!
(I posted this in the Lounge, but got no takers, thought y'all might appreciate it more :P)

I came down with a very crappy head cold overnight, and need to get as better as soon I can by Monday, when I have a very important interview for an Internship. I wasn't up for dealing with poultry and hardcore cooking, so I took the suggestions of DU'er MaltaBlue, and this is what I came up with:

Ingredients:

5 large cloves of garlic, minced
1/2 yellow onion, chopped
1/2 large Red Bell pepper, chopped
1 Habanero pepper, diced, save a few seeds
1 package Ramen Noodles
Approx. 1 cup of Fresh Spinach
2.5 cups of Chicken Stock
1.25 cups Water
1/8 cup Olive Oil
Sriracha Hot Sauce
Kosher Salt
Fresh Ground Black Pepper

1. Heat up the olive oil in a stock pot, add garlic and onion, cook on med-low until onion is translucent
2. Add red bell pepper, cook for a few minutes
3. Add chicken stock and water, and habanero, and as much sriracha as you can handle
4. Bring to a low boil
5. Add Ramen noodles, cook, season to taste with pepper and salt
6. Add spinach, stir as it wilts
7. Remove from heat
8. Eat

I just ate almost all of it, 2 hugh! bowls. I'm so stuffed. Breathing a little better now too :D

2. it was sooo tasty!
And, kinda nice to have the chicken flavor without the meat. A nice clear broth, very spicy, and the Ramen noodles worked great! Next time might make it with rice noodles.

I've combined that with saline nasal spray and Emergen-C. So far I have 1 functional nostril, and one that's 50/50. Getting there! :D

It never goes into my chicken soups but it will now.

6. We put it in the new batch tonight, of "real" chicken noodle soup
This time with chicken breast and orichiette pasta in it. I put spinach on everything, I wilt it in soups, in pasta, put it on sandwiches instead of lettuce. I love it. Spanikopita is my favorite dish. :D

7. Do try some swiss chard some time
They taste great and are pretty with the red veins and stems.

I'm trying to use way more greens lately. DH and I read a book about Omega 3 and learned that some fish have so much of it because they get it from the greens they eat in the waters. The book recommended all sorts of greens to boost the Omega 3s. Chard is great steamed and then tossed with some olive oil and browned garlic bits.
