Fun with the ice-cream maker |
|
First, make a weak sugar solution -- two cups water, one cup sugar. Bring to a boil. Cool completely and stick in a blender. Stir in two cups buttermilk and about two loose cups of frozen raspberries. Hit puree and keep it going until it's smooth. Strain out the seeds if you want, and then freeze (I had to freeze in two batches, as I have a small ice-cream maker).
In spite of all of the raspberries, this is actually a pretty subtly flavored (what the heck is it? Sorbet?). I think it might go well with shortbread, or perhaps floating in a multiple-berry soup.

1. Its more ike a sherbet |
|
A sorbet is just fruit, sugar, and water.
1 part sugar 1 part water Cooked together until all the sugar is disolved (maybe 2 minutes or so)
2 parts fuit (pureed)
Allow everything to get good and cold
Run it through your ice cream maker
Adding the milk makes it a sherbet
