Strawberry Tapioca Pie
I let 3 tbsp tapioca pearls soak for a couple hours, then simmered with about a cup of water and 2 tbsp sugar. I sliced 2-3 cups strawberries and put a tbsp sugar in them. Then mashed 1/2 cup strawberries. Then I mixed the mashed strawberry with juices, into the cooled tapioca. Mixed it with the sliced strawberries and poured it in a baked shell. Yum. But I have to figure out how to get the pearls to dissolve more. The stevia is a wonderful sweetener for strawberries, it really seems to bring out a more natural strawberry sweet. I found the stevia in a little bottle in the natural foods section of Fred Meyer, so I think most grocery stores should have it. It's kind of spendy, but you only need a few drops.
