Bison
I've only cooked it a few times.

It's ground. I've not yet bought the steaks.

I marinate it in ginger soy which seems to reduce the gaminess.

Then I marinate diced portobello mushrooms in balsamic vinegar and saute them.

Then in a separate pan I saute garlic, onions, and add the meat and later, add the shrooms.

I serve it with home made apple sauce, rice (either wild or brown or a combo) and a salad or seasonal vegetable.

People seem to really love it.

I may have posted this recipe before but I can't do a search due to a temporarily compromised keyboard.

If so, please excuse any redundancy.

Just was curious about other recipes and foodies' familiarity with this healthier meat.

I think venison is gamey and I don't care for it.

To be fair, it has been a long while since I've had either.

2. People often remark about the phenomenal texture of bison.
Venison some believe, require capers.

I've not cooked it before.

three times in the past month and it's never, ever been gamey. I find it has even a slightly milder taste than beef. We've had burgers, meatloaf and last night ribs. Even when I was trimming the raw ribs, they smelled delicious and even better than beef. And it's all been grassfed and finished.

I always fix the burger like my meatball recipe except form into patties: for 1 lb. I use 1 egg, about 1/3 c. grated parmesan cheese, salt, pepper, garlic to taste. I coat the outsides with pepper, more garlic, and just a little Lawry's season salt.

The recipe I made last night with bison ribs was awesome!

I think there is nothing you can't do with bison that you can do with beef. Just take into account that there is not the fat content in it that there is in beef.

4. I will echo the above comments and say I've never thought buffalo had a gamey taste.
Quite the opposite - the first buffalo burger I had (just plain old ground buffalo, maybe some salt), I remember thinking, "This tastes more beefy than beef!"

Try some grass-fed beef - same deal. It's just a more flavorful, more healthy meat.

5. We got half a bison last year.
I think it tastes better than beef--the way you always think beef will taste from the smell and it never quite does. The steaks are super tender, too.

Two things I've learned in the last year:
1. If you're cooking a roast or something in the crockpot, keep it submerged in liquid. It dries out otherwise.
2. Lower the heat. Bison can burn, there's so little fat in it. Add a bit of olive oil when doing burger, too, and it'll work up much better.

Everything we've had has been awesome, and it ended up costing us about $3.34/lb all told. The farmer got a decent price, the butcher did a great job, and it filled up my deep freezer all the way to the top (those things are bigger than you'd think).

I still have a few roasts, several packages of stew meat and soup bones, and some round steaks left. I ran out of burger, so this summer, I'm going to have them do fewer roasts and more burger. We gave a lot of it away and will give some more of the roasts away, too, but we still have a lot of meat in the freezer.

Just bought a lamb next week for Easter two days ago. It'll be awhile before we get another half a bison.

Once or twice, I've had examples I didn't care for, but as a rule, it's better.

Likewise with venison, but I live where you get fresh venison (during hunting season, of course).

I haven't tried cooking bison, but I would look to enhance the flavor, not mask it.

7. If you find Buffalo a bit gamey try Beefalo
Our local Fred Meyer carries Beefalo. It has a bit of a higher fat content than pure Buffalo and is a good meat to try if you are a bit squeemsh about going full bore. The steaks are particularly good and are easier to grill than Buffalo. You still need to go on the rare side otherwise it will seize up to the consistancy of leather.

I enjoy Buffalo particularly in braised foods like stew or chili.

My mom tried to foist it on me some 30 years ago (I guess she was a bit of a trailbreaker) but I secretly liked it.

8. We eat bison pretty regularly

9. That calf is too cute !!!
I'd never seen one before. Nor did I know their fur was so much fairer, but as a former vegie, those picts make me not want to eat it anymore.

Also there was a report earlier in the week that the buffalo population in Montana had dropped over the last year by 50% due to various causes.
