Muffin o' the week.
We love cranberries so when they're on sale for T-Day, I buy a dozen bags and stuff 'em in the freezer to have all year long.

So, I had bookmarked this recipe, and while I'm sure it's nummy just as it is, I went with a few changes based on the ingredients at hand.

The things I changed were:

Upped it to 24 muffins

2 cups shredded carrots instead of apples
1 cup dried chopped dates instead of figs
1.5 cups cranberries, cut the bigger ones in half
1 cup sunflower seeds instead of hazelnuts
1/2 unbleached AP and 1/2 ww pastry
1 cup melted butter plus 1/3 cup milled flax seed
1 cup soy milk and 1 cup plain yogurt

Ended up with enough batter for 24 regular muffins and 4 jumbo muffins, cups 3/4 full.

They are absolutely scrumptious! :9

1. I like all your substitutions much better than the original
although I'd be tempted to make these with raisins or currants.

After 10 years on Cape Cod and gleaning cranberries every fall for jellies and chutneys to give to my ex's relatives, I never want to see another damn cranberry as long as I live.

a cup of raisins but wasn't sure if I was going to need them for cookies or not at that point. We live out in a rural area, so we make every effort not to drive back into town once we're home.

I'm sorry you're burned out on cranberries. I'm so addicted to them. I bet those were some awesome jellies and chutneys, tho.
