I finally got around to making the Sparkling Beet Cups!

I made them as a joke for a friend. I used sugar free lemon jello, splenda and a Champagne Vineger. With the Horseradish they were quite spicy. They were a little bit of a hit at the pot luck. I made them in muffin tins, unmolded and did a little dollup of creme-fresh on top.

I can't believe I'm saying this but I liked them and I'm gonna make them again. Next time I may try Jicama or Water chestnuts with Rice Vinegar and Wasabi.

1. maybe people are ready for Jell-O things again...
...considering all the interest in mid-century modern. I have a recipe somewhere for lime-avocado Jell-O mold that includes mayo and whipped cream and crushed pineapple.

she only did the tomato aspic with celery thing once because it was NOT a hit. She frequently did lime or lemon jello with shredded cabbage and carrots, which wasn't half bad. Sort of like coleslaw in semi-dessert form.......

You all know that WAY back in the day, before commercially available Jello brand gelatin, there was CALVES FOOT JELLY, right? You boiled up veal bones to extract the gelatin, and then had to clarify it with egg whites, and THEN add your fruits and sugar and flavorings. I never understood how the whole thing didn't still taste like MEAT.

That's why Jello was such a hit - so you didn't have to slave all day over a hot stove messing with dead baby cow parts sticking out of the pots and pans to get THIS:

6. the carrot and cabbage thing is called Perfection Salad.
I believe it has a tiny bit of vinegar in it, too.

8. That's so weird that I'll have to try it.
I'd probably make it with Knox, sugar, and lemon juice instead of Jell-O but the idea has potential.
