HOLY CRAP!!! Avocado chocolate pudding works!!!
Dunno where I saw this, but vaguely remember googling it after I first heard about it. Then forgot about it until I saw a little bag of avocados on sale today.

The idea is to throw into your food processor...

some avocado chunks
an equal amount of bananas
some plain yogurt (optional, but I look for any excuse to throw yogurt into anything)
enough cocoa powder to turn th glop brown and taste like chocolate
vanilla and any other flavorings your little heart desires
favorite natural or artificial sweetening to taste
Chill for a while if you have enough willpower to leave it alone.

After this, no one will EVER be able to stomach that stuff Bill Cosby was pushing on us.

Not that I'm a big fan of pudding, but on the few occasions I want some I want REAL pudding.

cornstarch pudding right out of Joy of Cooking.

Never heard of such a thing but I'm willing to give it a whirl, I guess. I think I'd have to sneak this one in on the husband, tho. He was a little weirded out just by the thought of the blueberry corn muffins I made yesterday, but he ended up loving them. LOL

I'm also finding lots of variations on this one using dates instead of bananas and sugar. Seems to be a big hit in the raw foods movement:

3. Yeah. Lots of possible variations to this thing, but...
the thing that got me was how much it looked and tasted like the usual chocolate puddings we get. Personally, I think the raw foods types are half nuts, but they do come up with some good things.

(I just kinda assume corn muffins and berries go together so I'm not sure where your husband is coming from, but if he was wierded out by that, DO NOT tell him what's in this stuff before he eats it.)

7. No. I can't taste the avocado...
it's overwhelmed by the chocolate and banana. AFIK, the avocado is there just as a base for the texture.

I don't doubt some out there could taste it, and more might wonder where the chemical taste of pudding mixes went, but if I didn't make it, I'm not sure I'd believe what was in it.

8. From the recipes
I've looked at for this, it does appear it is for the body of the pudding as a sub for eggs. The second recipe I posted looks like the dates are also a refined sugar substitute.

I've made many an impromptu dessert out of cornbread, butter, and fresh home made strawberry jelly. :9

9. I picked up a couple of jars of Trader Joe's...
ginormous blackberries "just because" one day a long time ago, and they ended up in corn muffins. They were such a hit everywhere I took them, that I now automatically add some kind of berries every time I make the muffins.

Yeah, I can see homemade strawberry jam in them. Yum!

10. Being cooks, we can taste it
just by reading the recipe. It was a little more of a stretch for someone who doesn't do much cooking.
