Bear with me here - Quiche Pizza
Went to the fridge this afternoon. Lots of eggs, lots of cheese, a quart of half & half. Scallions and tomatoes in the yard. Crusty Italian bread on hand.

I wanted something more than scrambled eggs. So, googled "quiche, basic" - got the basics.
(I have never cooked a quiche, go figure.)

Here's what I came up with from what I had.

A cast iron skillet quiche pizza.

uses:

8' cast iron skillet
saute pan

ingredients:

5 eggs
1 cup half & half

a good 1/2 cup coarse diced scallions
2 tomatoes coarse chopped, drained

1 & 1/2 cups grated sharp cheddar
1/2 cup grated parmesan/romano

Italian bread, sliced ~ 1/2" thick

olive oil
black pepper
salt
garlic powder
basil
oregano

Preheat oven well, to 375.

Butter one side of bread slices and lay in skillet. Cut as needed to form a somewhat solid base. Set aside. (Bread will dry out some during the rest of the prep.)

Grate cheeses, toss with 1/2 tsp garlic powder, 1/2 tsp oregano. Set aside.

Whisk eggs, half & half together with 1/2 tsp salt and 1 good tsp black pepper. Set aside.

Heat olive oil in saute pan. When hot add scallions and toss.

When scallions are soft, Add tomatoes and 1 tsp basil. Cook a while longer, till fragrant (the basil comes up) and set aside.


In a large bowl, Add cheese mix to egg mixture and turn.

Add onion/tomato saute mix and turn.


Pour all over bread in the skillet and place on middle oven rack.

Cook at 375. Turn skillet around once @ about 15 minutes.

Check again in 10 or 15 minutes. Should have 'risen' nicely and be bubbly, with some brown edge showing along the skillet top.

Reduce heat to 225. Get set to plate and serve.

When just firm to the touch, pull it out and let set.

Slice while still warm, like a pizza.

This is probably a no brainer to most of you, but I was amazed. It came out like a quiche, but with a bread bottom and and browned crust like a pizza.

2. on follow up. Took the rest into staff mtg. this AM, reheated, they cleaned it out.
I got lucky. Always good to make a splash at staff meetings...:P
