The first zucchini bread of the season!
Had a few small ripe zukes on the vine and some tasty chopped pecans. Hope to have many more this season. :9

With whole wheat pastry flour subbed in for 1/2 of the flour, brown sugar, pecans, and some cloves in addition to the cinnamon.

You really can't beat allrecipes.com , I think. You get lots of good reviews and suggestions and you can change the servings and get an adjusted list of ingredients.

I haven't tasted it yet! Just got back from picking up my stand mixer while it was cooling.

It's very good. I remember now that I did cut the sugar down to 3/4 cup, I think. Not too sweet, just right. Will be good with a schmear.

5. I've actually gotten to like zucchini bread
My mother, when I was growing up, had a little garden, and we always had a sh*tload of zucchinis. She loved them, but I hated the damn things (sorry, I'm in a nasty mood - see my post about my car if you want to know why, which you probably don't).

Anyway, it was zucchini this and zucchini that. I've never liked squash much, and out of principle refused to eat anything with the word "zucchini" in the name.

As an adult, though, I have had zucchini bread and I actually like it.

I also like some of the other stuff she tried to get us to eat. I remember her giving us an unusual "burger", and when we questioned her on it she got all vague on us. It turns out it was buffalo meat, but we had to work to get her to admit it. Again, as a matter of rebellious childhood principal, we refused to eat it, but as an adult, it's actually pretty good and good for you.

So, good for your zucchini bread! As a (supposed) adult, I appreciate it. Certainly more than I would have when I was 10. ;)

I am so sorry you had such a crappy day. Don't blame you at all for being a little moody. :hug:

We don't eat much meat but, when we do, it's usually grassfed buffalo from our food coop. I really love it. The burger makes a great meatloaf and the short ribs are so meaty. I made them in a crock pot again the other night to take to a friend's house last night. Used this recipe and added green pepper and slices of two small organic oranges that I've had awhile and needed to use up. Didn't grill them, just used the recipe ingredients:

Hope your car problems are resolved soon and not too expensively.

6. Oh yum
It was just too cold for anything to grow here this year. My son moved into a house with a greenhouse. I think I'll just plan fall and winter veggies and skip the summer ones this year. Maybe someone at the farmer's market will have an overload of zucchini in the near future! I love zucchini bread. Never had it with pecans though, sounds like a good twist.

10. It is very good
even tho I reduced the sugar quite a bit. I think I only used 3/4 cup of brown sugar and that was it.

12. Thanks for the addition.
I'll cut the sugar as well because I find most zucchini bread recipes call for too much sugar.

Oh! I see my typo above. I'm not planning to use pea cans, I'm planning to use pecans. :D
