I made these this morning and sort of made up the recipe as I went along. I had some left-over ganache I used as the filling, but I'll include the approximate proportions to make some from scratch.
Blintz wrappers 3 large eggs 1/4 cup water 1/4 cup milk 1/8 cup unsweetened cocoa powder 1/4 teaspoon baking powder 1/2 cup all-purpose flour 1 1/2 tablespoons sugar 1 tablespoon unsalted butter, melted 1/4 teaspoon cinnamon
Filling (Ganache) 1/2 cup shaved chocolate (whatever kind you like to eat -- I used semi-sweet) 1/4 cup heavy cream
Topping Sour Cream Powdered sugar
Heat heavy cream to just boiling, then pour over shaved chocolate. Let sit for 2 minutes, then stir until smooth. Allow to cool to use as the filling.
Mix dry wrapper ingredients together. Mix wet wrapper ingredients together. Beat dry ingredients into wet. Let sit for 15-20 minutes.
Where I'm from, blintzes are made just like crepes. Pour a small amount of batter into a non-stick frying pan with a very small amount of melted butter in it on medium heat. Tilt skillet to cover bottom with a thin layer of batter. When the top solidifies, remove from skillet and keep warm.
When done, spread a line of filling inside each one, then top a few on each plate with sour cream and sprinkle with powdered sugar.
With the combination of the chocolate and the sour cream, they tasted a lot like chocolate cheesecake or a chocolate cheese danish. They were very filling, too. I think they'd also make a decent desert, and could be topped with cherries, flaming brandy, etc...

I don't think I could eat them for breakfast but what an awesome dessert! :hi:

Personally, I usually start out every work day with a 2,000 calorie danish, so this was a perfect substitute on a Sunday. :D
