Farm Journal's Complete Pie Cookbook (1965) |

Well, I had a nice long post about notes I had looking at this pie cookbook, but I pouffed it.
I picked up this book for free a couple of days ago at our recycling center. It's really delish with some unusual recipes for both dessert pies and savory pies.
Some gems:
Instead of serving a slice of cheese with your apple pie, bake some grated cheese right into the crust.
In certain instances, a kind of sugar cookie makes a great crust.
You can also add nuts to a crust to make them more crunchy.
Speaking of nuts, there's a fab recipe for black walnut pie, the same as pecan pie, but with black walnuts instead.
There's a "Snow Storm" squash pie, a basic egg custard with pureed squash and grated sweet potatoes.
Apple Butter and Pumpkin Pie is a basic pumpkin pie w/ Apple Butter.
Some interesting mincemeat pies, even venison mincemeat!
There are refridgerator pies, and ice cream pies, even pies with meringue and marshmallow fluff "crusts." I have to admit I've never eaten a MF outer shell. :crazy:
Some good breakfast "pies": Egg and potato, Egg and Ham, Egg and sausage (Quite a few of these are played up as being "pizza-like" to appeal to teenagers. I remember the days when the pizza delivery guy didn't come out this far. ;-)
Other savory pies: Asparagus and chicken, Eggplant and chuck (I don't see why you couldn't turn either completely veggie.
"Canadian" pies: Pork and cranberry
There's a huge selection of stuff and all fun and worthwhile. If anybody has any requests, I'd be happy to see if they are in this book and post them here. Browsing through cookbooks is one of my favorite hobbies. ;-)

I LOVE cookbooks. The more obscure and regional, the better.
Okay. I have to have the black walnut pie recipe. You don't have to type in the whole thing; just the ingredients and any odd technique will do, if you have time to look it up.
Sounds amazing. I've been going to order some black walnuts for a cake, so this would be an excellent incentive.

Unbaked 9' Pie Shell 1/2 C granulated sugar 1/2 C brown sugar 1 C light corn syrup 3 tblsp butter or margarine 3 eggs, slightly beaten 1 C chopped black walnuts 1 tblsp granulated sugar 1 tblsp flour
Combine 1/2 c granulated sugar, brown sugar and corn syrup in saucepan. Heat just to boiling. Remove from heat and add butter. Stir until butter melts.
Gradually stir hot mixture into eggs.
Stir in black walnuts
Combine 1 tblsp sugar and flour. Sprinkle evenly over bottom of pastry lined pie pan. Turn walnut mixture into pastry.
Bake in moderate oven (350 F) until top is browned, 45 to 50 minutes.

My grandma used to make a yellow layer cake (3 layers) with chocolate frosting and crush black walnuts on top. :9 :9 :9
