Ideas for best appetizers or small plates? (new to group) |
|
I love appetizers and have moved away from large meat and potatoes meals to smaller dishes that you can eat over the course of hours.
This is one of my favorites.
Tomato Basil Tart
Frozen pie crust 1-1/2 lb. ripe beefsteak tomatoes Kosher salt 1-1/2 cups freshly grated Parmigiano-Reggiano (about 3 oz.) 4 Tbs. roughly chopped pitted oil-cured black olives or Kalamata olives (optional) 12 large basil leaves, thinly sliced Freshly ground black pepper 2 Tbs. extra-virgin olive oil
Core tomatoes and slice into 1/4 inch slices. Sprinkle with salt and arrange in a colander over a bowl. Turn every 15 minutes and allow to drain for about an hour. (This is an important step, or tart will be soggy).
Heat oven to 425.
Place the following layers in the pie pan: 1 cup cheese 1/2 of the chopped olives 1/2 of the basil All of the tomatoes - overlapping slightly Remaining olives Remaining basil Remaining cheese Pepper Drizzle olive oil over the top
Cook 40 minutes, turning once halfway through. Allow to rest 30 minutes.
Doubtful you will have any leftovers, but if you do, you can rewarm them at 350 for about 10 - 15 minutes.
Yummy.

Now that I have a real kitchen for awhile, I am kind of excited about doing some cooking!
