Your most luscious, extravagant bread pudding recipe wanted
I'm going to cook for my sister on Thursday evening and I want to do a duck breast and probably a salad for the main course, and a bread pudding for dessert.

What's your favorite bread pudding recipe?

All tips and upgrades welcome too. :-)

1. A while back
I could swear there was a post here a while back about a chocolate bread pudding that sounded divine. I just did a search and can't seem to find it. Anyone remember this? I did find one thread in which there are some posts on bread pudding:

3. I remember what you are talking about
and that's probably what got my mind working on it for now. But I can't find it either.

The discussion in your link devolves into making bread pudding with Krispy Kreme doughnuts! Obscene! :rofl:

It looks like the Emeril recipe that was posted below. It sounds so good, I have to try it someday. If you do, let us know how it turns out!

On edit: I figured I may as well paste in the recipe here, since this is a bread pudding thread. :) It is from reply #1 in the above thread, posted by Dover. (Dover, I hope you don't mind.)

Chocolate Bread Pudding

Ingredients:

1 teaspoon unsalted butter
4 large eggs
1 cup firmly packed light brown sugar
1/2 teaspoon ground cinnamon
1/8 teaspoon freshly grated nutmeg
1 teaspoon pure vanilla extract
1 cup semisweet chocolate chips, melted
1/4 cup Grand Marnier or other orange flavored liquer
2 cups half-and-half
8 slices day-old white bread, crusts removed and cut into 1/2-inch cubes (about 4 cups)
2 cups semisweet chocolate chips
Spiced Cream (see instructions below)

Directions:

1. Preheat the oven to 350 degrees farenheit. Grease a 6-cup (9 1/4 x 5 1/4 x 2 3/4-inch) loaf pan with the butter.

2. Whisk the eggs, sugar, cinnamon, nutmeg, vanilla, melted chocolate, and Grand Marnier together in a large mixing bowl until very smooth. Add the half-and-half and mix well. Add the bread and let the mixture sit for 30 minutes, stirring occasionally.

3. Pour half of the mixture into the prepared pan. Sprinkle the top with the unmelted chocolate chips. Pour the remaining bread mixture over the chocolate chips. Bake until the pudding is set in the center, about 55 minutes. Let cool for 5 minutes.

4. To serve, cut the pudding into 1-inch thick slices. Top with the spiced cream.

Makes 8 to 10 servings

Ingredients for Spiced Cream

1 quart heavy cream
1/4 cup granulated sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon freshly grated nutmeg
Directions

1. Beat the cream with an electric mixer on high speed in a large mixing bowl for about 2 minutes. Add the sugar, cinnamon, and nutmeg and beat again until the mixture forms stiff peaks, another 1 to 2 minutes.

Makes 4 cups

5. Emerils -
It is divine, very rich. I also think it makes a big difference if you use all fresh ingredients, even fresh spices for the spice cream. I don't usually worry about that too much, but the chocolate is so rich that the other ingredients need to be at their best to not get overwhelmed.

2. Pineapple
This is only an approximation--I don't have a recipe written down. Mix a can of drained crushed pineapple with cubed bread in a greased casserole. Mix together a cup or two of milk (or cream) with a couple of eggs and a bit of sugar, a pinch of salt, and a splash of vanilla. Dump this mixture over the bread mixture. Refrigerate a bit to let the bread soak up the mixture and then bake at 350 °or so until done. Sorry I can't be more precise, but it really is a good combination.
